Baked nectarine parfaits with rawnola

Most days breakfast is a mad rush of avocado on toast with a pinch of nutritional yeast or hemp seeds. salt and pepper and tomato if they’re in season, though if i’m  being completely honest, its actually the scraps of that combo after my 1 year old has picked off the bits that she wants… but whatever.
I am definitely a savoury started to the day, but when summer hits, and all the stone fruit is in season, and I’ve been super prepared that week and made a batch of rawnola- well, sitting down to this delight is the perfect way to start a sunny morning in my opinion.
I used store-bought coconut yoghurt, but you could substitute for whatever you fancy. If you don’t have nectarines, opt for peaches (admittedly, they are not much different…), apricots or plumbs- all will be fantastically delicious, and pretty as a picture.

Baked nectarine parfaits with rawnola

To make the rawnola:

15 Medjool dates, pitted.
1 Tbsp almond butter.
2 tsp coconut oil.
150g buckwheat grouts.
30g cacao powder.
65g shredded coconut.
30g cacao nibs.
2 tsp ground cinnamon.
1 Tbsp flax seeds.

To make the baked nectarines, you’ll need:

68 nectarines, halved and pitted
1/4 cup coconut sugar
1 vanilla pod


To make the rawnola:

1. Add the first 3 ingredients to a high-speed food processor and blitz into a paste. Set aside.
2. Combine remaining ingredients in a large bowl. Add date paste and mix well. Turn onto a large, lined baking tray and spread mix evenly. Set in freezer until hard.
3. Remove from freezer. Break into chunks and store in a container in the fridge.

To make the baked nectarines, you’ll need:

Scrape vanilla beans into the coconut sugar, and mix together. Rub on cute side of a nectarine, and place ina baking tray. Place under a hot grill for 4-6 mins, or until looking golden and delicious!


Layer up each jar with coconut yoghurt, a drizzle of pure maple syrup, the rawnola and the delicious, freshly baked
