Description

These gut healing berry gummies are a healthy dessert or snack for anyone, but particularly for kids- they’re filled with healthy fats, gut-healing gelatin and collagen, antioxidants and immune boosting honey.


Ingredients

Scale

Strawberry layer

125 strawberries, hulled and roughly chopped

½ cup water

1 Tbsp fresh lemon juice

2 tsp pure maple syrup or honey

2 Tbsp collagen

2 Tbsp grass-fed gelatin

Blueberry layer

125 bleuberries, hulled and roughly chopped

½ cup water

1 tsp vanilla OR 1 Tbsp lemon juice

2 tsp pure maple syrup or honey

2 Tbsp collagen

2 Tbsp grass-fed gelatin


Instructions

  1. Set aside your desired silicone moulds or simple line a medium sized glass container with brown baking paper.
  2. Add strawberries, water, lemon juice and maple syrup to a blender and blitz until smooth.
  3. Transfer to a saucepan and sprinkle the collagen and gelatin. Stand for 5 minutes then use a whisk to combine. Transfer to a low-medium flame and heat until almost simmering, whisking regularly (or until gelatin is completely dissolved). Pour between moulds (filling only half way) and then place in the fridge for 1 hour before making the blueberry layer.
  4. Make the blueberry layer. Add blueberries, water, vanilla and maple syrup to a blender and blitz until smooth.
  5. Transfer to a saucepan and sprinkle the collagen and gelatin. Stand for 5 minutes then use a whisk to combine. Transfer to a low-medium flame and heat until almost simmering, whisking regularly (or until gelatin is completely dissolved). Pour over the strawberry layer and then place in the fridge for 2 hours or until completely set.

THERMOMIX and MAGIMIX directions

  1. Strawberry layer. Add lemon juice and water into your bowl, then sprinkle gelatin and collagen over the top. Try to avoid the blades and sprinkle directly onto the liquid. Sit for 2 minutes. This step is called blooming at it will prevent you getting lumps.
  2. Add all remaining ingredients, adding less honey/sweetener to begin with if you desire.
  3. Blend for 4 minutes on low speed (speed 3 for a magi mix and thermomix) at 70c for 4 minutes.
  4. Blend for 1 minute at 70c at the top speed (speed 18 for magi, speed 10 for thermomix). Taste, add extra honey/sweetener if you like and blend through for 15 seconds if you do.
  5. Pour into moulds (filling only half way) or a small tray lined with baking paper. A loaf tin or a15cm square tin is perfect- just line with baking paper or it will stick.  Set in the fridge for 1 hour.

  11. Remove from moulds (or if using the lined tray remove and slice into small squares) then store in an airtight container in the fridge for up to 5 days. These are freezer friendly too.
