Made with only 5 ingredients these lemon bliss balls are a fresh, zingy and uplifting snack for any time of the year. Naturally vegan, gluten free and refined sugar free, they are a great lunch box filler and taste great with some optional added powdered ginger.




  1. If you have not used homegrown, organic or unwaxed lemons begin this recipe by washing your lemons well before use.
  2. Add cashews and coconut to a high speed blender and process for 60 seconds, or until fine.
  3. Add the remaining ingredients and blend a further 60 seconds, or until a until dough has formed. The dough should stick together in one large ball, but not be so sticky that it sticks all over your hand when you try to roll it. Test it out. Add extra dates if the mixture doesn’t stick together, add extra coconut if its too sticky.
  4. Pour a layer of desiccated coconut onto a small plate. Use a tablespoon to measure out portions of bliss ball dough. Roll into balls, placing each ball onto the coconut and coating. Once you’ve rolled and coated each ball, transfer to an air tight container and store in the fridge.

Store in the fridge for up to 2 weeks or in the freezer for up to 2 months.
